Potato scones are very popular served with breakfast, the basic ingredients used in the preparation of Potato or "Tattie Scones" means they are suitable for vegetarians .
Add 40g of the butter and seasoning to mashed potatoes.
Mix in enough flour to make a stiff dough.
Turn the dough out onto a floured surface and roll until about quarter of an inch thick.
Cut the dough into six inch circles and then into quarters.
Prick all over with a fork and cook on a Griddle or in a heavy pan, using the remainder of the butter.
Cook each side for about three minutes or until golden brown.
