Watercress Soup is a classic elegant soup that not only tastes delicious, it's incredibly easy to make, the peppery taste fresh of watercress adds a unique flavour to this nutritious soup.


1 Onion, peeled and roughly chopped 25g butter 250g potatoes, peeled and diced 600ml vegetable stock 150g of roughly chopped watercress 50ml cream a little milk if needed sea salt and black pepper


Cook the onion in the butter in a large pot until soft.

Add the potatoes and stock and cook until the potatoes are soft (approx 15-20 minutes).

When potatoes are nearly cooked, add the chopped watercress .

Churn the soup with a hand blender or liquidizer before adding the cream.

Use a little extra milk if the soup seems too thick.

Season with Sea salt and freshly ground black pepper and serve hot.
