Our beautiful blueberry muffins recipe makes enough batter for eight large muffins

 200 g Plain Flour
 150 g Granulated Sugar
 1.50 pinches Fine Sea Salt
 2 tsp Baking Powder
 80 ml Oil
 100 ml Full Cream Milk
 1 Large Free Range Egg
 1.50 tsp Vanilla Extract
 6 oz Ripe Blueberries

Our beautiful blueberry muffin recipe makes enough batter for eight large muffins

Preparation
Heat oven to 200 degrees, Fan Oven 180, Gas mark 6
Line 8 standard-size muffin cups with paper liners.

Directions
Thoroughly blend the flour, sugar, baking powder, and salt together in a large mixing bowl.

In a measuring jug add oil, beaten egg, vanilla essence and finally top up the jug to 250ml with milk, mix well then add wet mixture to the bowl with dry ingredients.

Stir well using a wooden spoon before folding the blueberries into the mixture.

Baking Instructions
Divide the batter between muffin cups. Sprinkle a little sugar on top of each muffin.

Bake muffins for 20 minutes then transfer to a cooling rack.
