Cucumber and Mint Raita

This raita is fresh and tasty – ideal as an accompaniment for curries or as a dip with crudites, crisps and bread. The touch of ground cumin adds an exotic flavour.

Yields1 Serving
 400 g Plain Greek Yogurt
 1 Cucumber
 2 tbsp Fresh Chopped Coriander
 2 tbsp Fresh Chopped Mint
 Ground Cumin
 Salt and Pepper to Season

Method
1. Chop the cucumber into small chunks, leaving the skin on.
2. Combine the cucumber with the fresh herbs
3. Sprinkle the cumin into the cucumber before adding the yoghurt
4. Season with salt and pepper
5. Mix thoroughly and chill before serving.
