The first mince pie of the season is said to be lucky, and these versions are ideal for making and freezing for Christmas, or to eat straight away.

Yields1 Serving
 350 g High Quality Mincemeat
 225 g Plain Flour
 125 g Unsalted Butter (Diced)
 2 tbsp Caster Sugar
 1 Large Egg (Beaten)

The first mince pie of the season is said to be lucky, and these versions are ideal for making and freezing for Christmas, or to eat straight away.

Method

1. Lightly butter a 12-case tin then put the mincemeat into a bowl and stir.
2. Place the flour, sugar and butter in a food processor and process briefly until resembling breadcrumbs, then slowly add the egg.
3. Bring the mixture together and wrap in cling film and chill for an hour before thinly rolling out the pastry onto a floured surface.
4. Cut out 12 circles, large enough to fill the cases in the tin. Press gently into each case, then fill evenly with the mincemeat.
5. Cut out another 12 slightly smaller circles and use to cover the mincemeat. Press the edges together with the end of a fork to seal.
6. Make a small slit in the top of each, then brush lightly with milk.
7. Set the oven to 200ºC then chill the pies for about 30 minutes, while the oven heats.
8. Bake the pies for 20 minutes until golden brown.
9. Cool a little before serving.
