Perfect pancakes are elusive creatures, every region has it’s own unique take on this simple to make treat and Scotland is no exception.

 4 oz Self raising flour
 1 pinch Salt
 2 oz Caster sugar
 1 Egg

The perfect pancake is an elusive creature, every region has it’s own unique take on this simple to make treat and Scotland is no exception.

Scotch pancakes or drop Scones as they are sometimes known are delicious served hot from the griddle, these mouthwatering treats are a particular favourite of mine as my Mother used to make them regularly during my childhood years .
How to make the perfect Pancake:

1. Mix the flour, salt and sugar in a suitable bowl, add the egg and gradually beat in the milk to make a thick batter.

2. Bake the pancakes 2 or 3 at a time by dropping spoonfuls of the mixture on a hot, well-greased griddle.

3. Enjoy your freshly made pancakes with butter or jam
