How to cook perfect roast potatoes
1. Wash and peel 1 kg of Maris Piper or King Edward potatoes and divide into reasonably sized uniform pieces.
2. Place in a pan and cover with cold water, add salt then bring to the boil.
3. Turn down the heat and simmer the potatoes for 8-9 minutes.
4. Preheat the oven to 220C/425F.
5. Pour 100 ml olive oil into a roasting tin and heat it in the oven for 10 minutes until extremely hot.
6. Drain the potatoes in a colander and roughen up the edges by giving them a good shake.
7. Add a couple of teaspoons of flour and shake vigorously to roughen the edges even more.
8. Carefully place the potatoes in the baking tin with the hot oil, turning them to coat them in the hot oil then place in the oven.
9. Cook for 35-40 minutes, turning once or twice in the last 15 minutes of cooking, until golden brown and crispy.
10. Remove from the roasting tin and serve topped with a sprinkling of sea salt.
