Method
1. Halve the apricots and remove stones. Crack six apricot stones and remove the kernels. Blanche the apricots in boiling water, remove skins and set aside.
2. Add apricots, sugar and water to large pan and put on a low heat, stirring until sugar is dissolved.
3. Mash softened apricots into chunks with potato masher.
4. Add butter, increase heat while stirring.
5. Wait until mixture comes to boil and time for 4 minutes.
6. Remove from heat, leave for 10 minutes and pour into sterilised jars, dropping one kernel into each jar.
